Method
- Raw zucchini, sliced into ribbons with a peeler. Thick coins are watery and squeaky and this only works thin.
- Salt it lightly and let it sit five minutes, then blot it — even raw it gives up water.
- Lemon and oil, and dress it right before it goes on the table. Left dressed, it wilts to nothing in ten minutes.
- Parmesan in sheets and mint torn over. It is a fifteen-minute salad and it eats like a restaurant course.
