Method

  1. Zucchini is over ninety percent water. Salt it, wait ten minutes, pat it dry, and only then near the pan.
  2. Very hot pan, one layer, left alone. Moved around it releases everything you just drained out.
  3. Garlic in for the last thirty seconds only, then off the heat.
  4. Feta crumbled over warm rather than hot, lemon and mint at the end.
