Method
- Cut the cauliflower into flat-faced pieces rather than florets. Flat faces are what brown.
- Cast iron, screaming hot, oil, one layer, and left completely alone until the faces are nearly black.
- Tahini let down with lemon and water until it is pourable — it seizes and goes pale before it loosens, which is normal and not a mistake.
- Sauce on the plate, cauliflower on top so it stays crisp. Toasted cumin over. Charred is the flavor; timid browning here tastes of nothing.
