Method
- Char the eggplant until the skin blackens and it collapses — over a flame, under a grill, or at 240C. Undercooked eggplant is spongy and bitter.
- Drain the flesh in a sieve for ten minutes. It holds a surprising amount of water and it will thin the sauce.
- Tahini let down with lemon and cold water past the seizing point, garlic grated in while thick.
- Fold it through rather than blending, so there is still texture. Good oil poured over at the end.
