Method
- 2 oz gin, ½ oz lemon, ½ oz lime, ¾ oz simple syrup, 1 oz cream, one egg white, three drops of orange flower water.
- Dry shake for a long time. Then shake with ice for longer than you believe — the original bar employed a line of men to do it in shifts.
- Strain into a chilled glass with no ice, rest it thirty seconds, then pour soda down the middle to lift the head.
- It is a ridiculous amount of work for one drink and it is worth doing once so you understand what texture in a cocktail actually means.
