Method
- Cut flat faces so the florets touch the tray. Round florets sit on one point and never color.
- Roast naked in oil first at 220C until properly dark, which takes longer than most recipes admit.
- Parmesan only in the last five minutes, or it burns to bitter leather while the cauliflower is still pale.
- Lemon and chili off the heat. The char is the dish and everything else is seasoning on top of it.
