Method
- Rinse the green tea leaves with a splash of boiling water and pour it off. That first wash takes the bitterness out.
- Then steep properly, add a serious quantity of mint, and sweeten while hot.
- Pour from a height into the glasses. It aerates the tea and builds the foam on top, which is not decoration but the point.
- Pour back into the pot and out again two or three times. Each pass makes it better.
