Method

  1. Steep the mint and ginger in hot water off the boil, then chill it completely before ice goes anywhere near it.
  2. Pouring hot liquid over ice melts the ice and dilutes the drink to nothing. Chill first, always.
  3. Honey while it is warm, lemon once it is cold.
  4. Make it in a pitcher the night before. It is better on day two, which almost no cold drink is.
