Method
- Steep the mint and ginger in hot water off the boil, then chill it completely before ice goes anywhere near it.
- Pouring hot liquid over ice melts the ice and dilutes the drink to nothing. Chill first, always.
- Honey while it is warm, lemon once it is cold.
- Make it in a pitcher the night before. It is better on day two, which almost no cold drink is.
