Method

  1. Hot, not boiling. Boiling water turns ginger bitter and flattens honey into sugar.
  2. Fresh ginger sliced thin and steeped five minutes, tasting as it goes rather than by the clock.
  3. Lemon in next, honey last and off the heat.
  4. A toddy with the whiskey left out, and it is a real drink rather than a consolation — which is worth saying, since somebody is always driving.
