Method
- Equal parts maple and dijon, whisked. The mustard cuts the syrup and stops it reading as a dessert.
- Chicken seared dry and salted first, right through to golden, before any of it goes near the pan.
- Glaze in for the last few minutes with the heat down, turning so it coats and reduces without catching.
- A splash of vinegar or lemon at the end. Maple is sweeter than honey and needs more help than honey does.
