Method
- Sear the chicken hard and take it out at 80 percent — it finishes in the sauce.
- Wine in and reduced by half before any cream, so the alcohol cooks off.
- Cream reduced until it coats a spoon, then mustard whisked in off the heat.
- Boiled after the mustard goes in, the sauce splits and goes grainy. Thyme and lemon at the end.
