Method
- The sauce is made in the roasting pan while the chicken rests, which is the only correct time to make it.
- Pour off most of the fat but keep every brown bit stuck to the base. That crust is the sauce.
- Wine in over heat, scraped clean, and reduced by half before anything else.
- Cold butter and mustard beaten in off the heat. Boil it after that and it splits — this is the step that goes wrong.
