Method
- Pound the chicken thin and lay the ham on one side only, pressed on with the herb between.
- Ham side down first and left alone, so it fuses to the meat rather than peeling off.
- Take it out and make the pan sauce: wine reduced hard, then cold butter beaten in off the heat.
- Do not boil it after the butter. Lemon at the end and no salt until you have tasted it — the ham is doing that.
