Method
- Honey and mustard mixed in a bowl, not brushed on separately. They emulsify together and behave as one glaze.
- Sear the chicken first, unglazed. Sugar in a hot pan from the start burns to tar before the chicken is cooked.
- Glaze goes on in the last four or five minutes, turned once or twice so it lacquers rather than scorches.
- Rest it. The glaze is molten straight off the heat and sets to something you can actually cut in about three minutes.
