Method
- Steam the clams open in the wine separately, in a covered pan, and take them out as they open.
- Left in, the last ones to open overcook the first ones into rubber.
- Strain the clam liquor through a cloth — there is always grit and it will ruin the dish.
- That liquor plus garlic oil and pasta water is the sauce. No cheese, ever, and parsley at the end.
