Method
- Sliced garlic warmed slowly in a generous pour of olive oil until it just turns gold. Stop before brown.

- Pasta in dripping wet with a good splash of its water, tossed hard until oil and starch turn creamy.
- Parsley and chili off the heat. No cheese — this is an oil-and-wine sauce and parmesan flattens it.
