Method
- Flake the salmon in big pieces and stop. Mashed fine, it becomes paste and the cakes eat like a puck.
- Panko soaked in a splash of milk first, so it binds without pulling moisture out of the fish.
- Chill the shaped cakes fifteen minutes. Warm cakes fall apart the moment they meet the pan.
- Hot pan, decent fat, and no turning until a crust has formed. Lemon and yogurt to serve.
