Method
- Flake the salmon in big pieces. Mashed fine it becomes paste and the cake eats like a puck.
- Panko soaked in a splash of liquid first so it binds without drawing moisture out of the fish.
- Chill the shaped cakes fifteen minutes. Warm cakes fall apart the moment they touch the pan.
- Hot pan, decent fat, and no turning until a crust has formed. Lemon and dill to serve.
