Method
- Pound it genuinely thin — a scant quarter inch, thinner than feels sensible. Thickness is the enemy of schnitzel.
- Flour, egg, panko, and press the crumbs on lightly rather than firmly. A loose coating is what lets it puff away from the meat.
- Enough fat in the pan that the cutlet floats slightly, and spoon the hot fat over the top as it cooks.
- That basting is what makes the crumb soufflé and separate. Lemon at the table, never before.
