Method
- Pound the pork to an even thickness, a scant half inch. Uneven cutlets are raw in the middle and dry at the edge.
- Flour, then egg, then panko, and press the crumbs on firmly. Any wet patch in the flour layer is where the coating falls off.
- Panko, not fine breadcrumbs. The large flakes are what make the crust shatter rather than crunch.
- Fry at 170C and drain it standing on a rack, never flat on paper, or the underside steams soft.
