Method

  1. The salmon never touches the heat. Fold it through the eggs off the stove or lay it on top.
  2. Cooked smoked salmon goes firm and fishy and loses everything that made it worth buying.
  3. Eggs low and slow in butter, stirred, pulled distinctly underdone because the salmon will not cook further and the eggs will.
  4. Dill and lemon at the end, and go carefully with salt. Smoked salmon is already seasoned.
