- Four things cooked separately: lentils, rice, pasta, and a great deal of onion fried dark and crisp.
- The onions decide it. Thirty minutes in plenty of oil until they are genuinely brown, and half of them kept back for the top.
- A sharp tomato sauce with vinegar and cumin, made in the onion oil.
- Layered rather than stirred, the crisp onions last. Egypt's national dish is a starch on a starch on a starch, and the point is the texture between them.
