Method
- Strip the kale off its stems and slice it thin. The stems never soften and one of them will find somebody.
- Massage it with salt, lemon and oil for a full minute, until it darkens and collapses to about half its volume. This is a cooking step performed with your hands.
- Let it sit ten minutes. Kale keeps softening in acid and it is a better salad after a rest than it is right away.
- Parmesan shaved over rather than grated. Brassica needs fat and acid more than it needs time, and the sheets of cheese are the fat.
