Method
- Toast the rice dry in the butter until the grains go chalky at the edges, then hot stock a ladle at a time.
- Ham fried first and set aside — added raw at the end it makes the pot wet and pink.
- Frozen peas in for the last two minutes only, straight from the freezer.
- Butter and parmesan beaten in hard off the heat. It should slump on a tilted plate rather than standing up.
