Method
- Toast the rice dry until the grains look chalky at the edge, then hot stock a ladle at a time, stirring.
- Frozen peas in for the last two minutes only, straight from the freezer. Cooked longer they go khaki.
- Crush a third of them against the pan so the risotto turns faintly green and holds together.
- Butter and parmesan beaten in hard off the heat, mint rather than parsley. It should move on a tilted plate.
