Method
- Onion cooked properly soft and sweet first, fifteen minutes, before any tomato.
- Tomato reduced hard until it darkens, then the beans folded in with some of their liquid.
- Into the oven uncovered at 180C for forty minutes, which is what gives the top its browned skin.
- Uncovered is the point. Dried oregano early, good oil and feta at the end, and it is better warm than hot.
