Method
- Onion, carrot and celery softened in a lot of olive oil — more than feels right, since the oil is the body of this soup.
- Tomato in and cooked down, then the beans and water to cover well.
- Simmer until the beans are completely soft, crushing some against the pot to thicken it.
- Finish with raw olive oil poured over each bowl. Greece's national dish is beans and oil, and skimping on the second one is how it turns into a diet soup.
