Method

  1. 2 oz cognac, ¾ oz amaretto, stirred over one big cube.
  2. Two ingredients, no citrus, no bitters. There is nowhere to hide, so a rough brandy will taste rough.
  3. Stir longer than feels necessary; the dilution is the only thing softening it.
  4. Orange peel expressed over the top, which is not traditional and improves it.

cognac
Grape spirit with fruit and oak, which makes it rounder and less spiky than whiskey in the same drink.
amaretto
Almond-scented and very sweet, so it functions as the sugar in a drink rather than as an addition to it.
