What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cod
- potato
- milk
- dill
- leek
Good if you have them, fine if you do not: carrot.
Method
- Leek and potato softened in butter first, then simmered until the potato starts to break down and thicken the soup.
- Milk warmed in gently and never boiled, or it splits.
- Fish added off the boil for four minutes only, and it carries on cooking in the hot soup.
- Dill at the end, in quantity. It is the flavor the soup is built around rather than a garnish.

Why each of these is on the list
What the ingredients are actually doing
- cod
- Lean, mild and flaky, which makes it a vehicle rather than a flavor.
- potato
- Waxy holds its shape, floury falls apart, and almost every potato complaint is the wrong one for the job.
- milk
- Softness and a little sweetness.
- dill
- Grassy and slightly anise, and it belongs to cold food more than hot.
- leek
- The gentlest allium — sweet and silky when cooked slowly in fat.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
