Method
- Same-sized pieces, started in cold salted water, cooked until a knife falls out of them.
- Drain and put them back in the dry hot pan for a minute to steam off. Wet potato will not take butter.
- Butter first, on its own, worked in. Then the warm milk or buttermilk, a little at a time.
- Masher or ricer only. Buttermilk instead of half the milk is the version worth making — the slight sourness is what stops a bowl of mash tasting like nothing.
