Method
- Whisk the cornmeal into cold milk before any heat. Rained into hot liquid it lumps instantly and stays lumpy.
- Low heat and constant stirring for fifteen minutes. It thickens suddenly near the end.
- Salt the pot at the start. Unsalted porridge tastes of nothing and honey afterwards will not rescue it.
- Butter and honey off the heat, and looser than you want it — it sets in the bowl within a minute.
