easyWhy tonight. A pinch of chili, not a dare. Whisk the cocoa to a paste in a little cold milk first or it floats in bitter lumps.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cocoa
- milk
- chili flakes
- honey
Good if you have them, fine if you do not: vanilla.
Method
- Whisk the cocoa to a paste with a splash of cold milk before any heat, or it floats in bitter lumps.
- Warm the rest of the milk gently and whisk it in. Chocolate and milk both scorch and neither forgives it.
- Chili in a pinch, off the heat, and let it sit two minutes before tasting — the heat builds.
- Salt as well as honey. Cocoa without salt tastes dusty and thin no matter how much sugar is in it.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- cocoa
- Bitterness and depth with almost no fat, so it dries out whatever it goes into.
- milk
- Softness and a little sweetness.
- chili flakes
- Heat you can dose. Bloomed in oil they spread through everything; scattered at the table they stay sharp and sit on top. Same flakes, two different dishes.
- honey
- Sweetness with a floral edge and enough body to change the texture of what it is in.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Overnight oats
Ranks high while the milk is still honest. Oats drink the liquid in the fridge. Honey in the morning, not the night before.

Cinnamon oats
Cinnamon into the dry oats, not sprinkled on top. Salt the pot, and loosen it at the table because oats set solid in the bowl.

The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
