easyWhy tonight. A pinch of salt makes cocoa taste darker.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- oats
- milk
- cocoa
- honey
Good if you have them, fine if you do not: banana.
Method
- Cocoa whisked into a little of the cold milk first, to a paste. Tipped into hot milk it floats in bitter lumps.
- Salt matters more here than in any other oat bowl — cocoa without salt tastes dusty and thin.
- Cook in milk on low, stirred, until it thickens, then honey off the heat.
- Banana sliced on top rather than cooked in. Cooked banana in cocoa oats turns the whole bowl grey.

Why each of these is on the list
What the ingredients are actually doing
- oats
- Starch that thickens whatever it is in.
- milk
- Softness and a little sweetness.
- cocoa
- Bitterness and depth with almost no fat, so it dries out whatever it goes into.
- honey
- Sweetness with a floral edge and enough body to change the texture of what it is in.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Chili hot chocolate
A pinch of chili, not a dare. Whisk the cocoa to a paste in a little cold milk first or it floats in bitter lumps.

Overnight oats
Ranks high while the milk is still honest. Oats drink the liquid in the fridge. Honey in the morning, not the night before.

Cinnamon oats
Cinnamon into the dry oats, not sprinkled on top. Salt the pot, and loosen it at the table because oats set solid in the bowl.

Berry yogurt smoothie
Frozen berries before they frost-burn.
