Method
- Canned chickpeas make cakes rather than falafel — they are already cooked and too wet to hold a proper crust.
- Dry them hard, pulse rather than purée, and keep some texture. A smooth paste fries to a dense puck.
- Chill the shaped cakes fifteen minutes before they go near the pan. Chilled cakes hold together.
- Shallow-fry in a decent depth of oil and leave them alone until a crust forms. Tahini sauce to serve.
