easyWhy tonight. Citrus and a pile of garlic. The pork should taste like a marinade, not a gravy.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- pork
- orange
- garlic
- cumin
- oregano
Good if you have them, fine if you do not: lime.
Method
- The marinade is citrus, garlic, cumin and oregano, and the pork wants at least four hours in it — overnight is better.
- Bring the marinade to a boil separately if you want to use it as a sauce. Raw marinade off meat is not a sauce.
- Roast low and slow until it pulls apart, then finish hot to crisp the outside.
- That crisping at the end is what separates mojo pork from a pot roast. Lime at the table.

Why each of these is on the list
What the ingredients are actually doing
- pork
- The forgiving meat. Shoulder takes hours and rewards them, chops take minutes and punish you for one too many, and the fat is the flavor in both cases.
- orange
- Sweeter and rounder than lemon and lime, so it softens rather than sharpens.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- oregano
- One of the few herbs that is stronger dried than fresh, and the dried version is what most of these dishes want.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
