Method
- Citrus, garlic, cumin and oregano whisked cold. It is a sauce rather than a marinade for shrimp — twenty minutes at most.
- Longer and the acid cures the shrimp, which turns them opaque and firm before they ever see heat.
- Sear them dry and hard, ninety seconds a side, then out.
- The mojo warmed briefly in the pan afterwards and poured over. Lime again at the table.
