What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- shrimp
- coconut milk
- lime
- garlic
Good if you have them, fine if you do not: ginger.
Method
- Garlic and ginger soft in a little oil first, then coconut milk brought to the barest simmer.
- Reduce it a few minutes before the shrimp go anywhere near it. Shrimp cook in two minutes and the sauce needs longer than they do.
- Shrimp in, heat low, and pull the pan as soon as they turn opaque.
- Lime off the heat, never in the simmer. Acid boiled into coconut milk dulls, and the whole dish rests on that brightness.

Why each of these is on the list
What the ingredients are actually doing
- shrimp
- Cooks in about two minutes and is ruined in three.
- coconut milk
- Fat that carries chili and spice further than water can, with a sweetness underneath.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
