easyWhy tonight. Make the sauce cold and first, sear the shrimp hard and last, and rinse the noodles so they stop cooking in the bowl.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- rice noodles
- shrimp
- garlic
- fish sauce
- lime
Good if you have them, fine if you do not: cilantro.
Method
- Dissolve the sugar in the lime juice, then add fish sauce, then a little water. Cold, uncooked, and made before anything else.
- Rice noodles to just done, rinsed cold. They will sit in sauce and any softer is a lost bowl.
- Shrimp dried, then seared hard and fast — ninety seconds a side, and out.
- Everything tossed together off the heat with the garlic raw in the sauce, cilantro at the end.

Why each of these is on the list
What the ingredients are actually doing
- rice noodles
- They keep cooking in whatever they sit in, so they come out of the water early and go into the sauce underdone.
- shrimp
- Cooks in about two minutes and is ruined in three.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
- fish sauce
- Salt and deep savoriness, and it smells far stronger than it tastes once it is in something.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
