Method
- Dissolve the sugar in the lime juice first, then add the fish sauce. Sugar will not dissolve properly in oil or in cold fish sauce.
- Garlic grated in raw. This sauce is not cooked at any point — heat flattens fish sauce into something one-note and salty.
- Hot noodles into the sauce and tossed immediately so they absorb while they are still open.
- Taste it before it goes on the noodles; it should be aggressive in the bowl and balanced on the fork. Chili and scallion last.
