easyWhy tonight. Som tum logic on green cabbage. Pound garlic, dress, eat soon so it stays crisp.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cabbage
- lime
- fish sauce
- sugar
- garlic
Good if you have them, fine if you do not: peanuts, chili flakes.
Method
- Dissolve the sugar in the lime juice before the fish sauce goes in. It will not dissolve later.
- Pound or crush the garlic and chili into a rough paste first, so they distribute rather than sitting in pieces.
- Shred the cabbage very thin and bruise it slightly with the dressing, working it with your hands.
- Peanuts on at the very end so they stay crisp. Taste for the four notes: sour, salty, sweet, hot.

Why each of these is on the list
What the ingredients are actually doing
- cabbage
- Cheap, keeps for weeks, and completely different raw and cooked.
- lime
- Sharper and more floral than lemon, and it fades faster — juice it the same hour you use it.
- fish sauce
- Salt and deep savoriness, and it smells far stronger than it tastes once it is in something.
- sugar
- Not just sweetness — it balances acid and bitterness, which is why a sour drink and a tomato sauce both want a little.
- garlic
- Burns in seconds and turns the whole dish bitter, so it almost never goes in first.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
