Method
- Vinegar is the defining ingredient, not the heat — the name comes from wine and garlic, and it should taste sour first.
- Marinate the pork in the vinegar, garlic and spices for at least four hours.
- Brown it hard in batches, then braise low and slow until it falls apart.
- Taste for acid at the end. If it tastes only hot, it needs more vinegar rather than less chili.
