Method
- Wilt the spinach, then squeeze it out properly in a towel. Wring it until you are sure you have gone too far.
- Chop it. Whole leaves in a cream sauce are stringy and impossible to eat politely.
- Garlic in butter, cream in, reduced until it thickens on its own without flour.
- Spinach back in for a minute only. Nutmeg and a lot of black pepper. Parmesan if the cream needs a reason.
