Method
- Mushrooms in a hot dry-ish pan in one layer, untouched, until they have given up their water and started to brown.
- Butter and garlic in after the browning, never before — garlic burns in the time mushrooms need.
- Cream in and simmered until it coats the back of a spoon. It thickens fast, so keep the heat modest.
- Salt at the very end, and a scrape of nutmeg. Salted early, mushrooms leak water and you never get the color.
