Method
- Hot pan, mushrooms in one layer, and then leave them alone. Crowded or stirred they steam in their own water and go grey.
- They release water, the water boils off, and only then do they brown. Wait for that turn — it is the entire flavor of the dish.
- Butter and garlic in at the end, thirty seconds, then a splash of pasta water to make a sauce.
