easyWhy tonight. Mild on purpose. Almonds blitzed or just in. Cardamom if the jar is open.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- chicken
- yogurt
- coconut milk
- cumin
- almonds
Good if you have them, fine if you do not: cardamom.
Method
- Blanch and blend the almonds into a paste with a little water. That paste is the body of the sauce, not a garnish.
- Yogurt must be whisked and added off the heat, slowly, or it splits into curds and whey.
- Onion cooked pale and soft rather than browned — korma is a mild, pale curry and browning changes its character entirely.
- Cardamom whole and fished out, never ground in, which turns it soapy.

Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
Why each of these is on the list
What the ingredients are actually doing
- chicken
- Two different foods depending on the cut.
- yogurt
- Acid and creaminess together, which is why it works as a sauce with no cooking at all.
- coconut milk
- Fat that carries chili and spice further than water can, with a sweetness underneath.
- cumin
- Earthy and slightly bitter, and it needs heat to open.
- almonds
- Fat and crunch, and toasting is not optional — raw almonds taste chalky and toasted ones taste like almonds.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
