Method
- Onion and pepper cooked long and soft first, fifteen minutes, until they slump rather than merely soften.

- Grated carrot in near the end so it keeps some bite. It is a relish, not a stew.
- Better after a night in the fridge, and eaten cold or warm rather than hot.
