What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cauliflower
- olive oil
- lemon
- paprika
Good if you have them, fine if you do not: tahini.
Method
- Cut through the core so the slices hold together. Cored first, it collapses into florets on the board.
- You get two real steaks from a head and the rest is offcuts. Roast those alongside rather than pretending.
- Sear the flat faces in a hot pan first, then finish in the oven — color from the pan, cooking from the heat.
- Paprika and oil before the pan, lemon and tahini after. It needs a sauce; on its own it is dry.

What the method is trying to make happen
Sequence, correction, heat and texture, equipment workarounds, scaling, and component reuse are available with this cook sheet.
An educational plan from a curated corpus. Not a nutrition, allergen, or doneness guarantee.
Cook or pour it, then edit the shelf if you emptied a bottle or used the last of something.
The technique underneath this
- VinaigretteDispersing fat into acid so it stays dispersed for as long as dinner takes, which is all it has to do.separates immediately · greasy · too sharp · dull
- Building a sourSpirit, citrus and sugar in a fixed geometry, then adjusted for how strong the particular bottle in front of you is.thin and sharp · cloying · spirit disappears · no foam
Going wrong while you cook it? Say what it is doing and the triage will tell you what is happening, the smallest move, and the instinct to resist.

Why each of these is on the list
What the ingredients are actually doing
- cauliflower
- Bland when boiled, excellent when browned.
- olive oil
- Two ingredients sharing a name.
- lemon
- Acid you add at the end, not the start.
- paprika
- Color and a mild sweet pepper flavor, and it scorches into bitterness almost instantly.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.

Charred cauliflower with tahini
Char it until it is nearly too dark, then sauce it. Cut flat faces so it touches the pan, because round florets never color.

Parmesan roasted cauliflower
High heat until the edges almost burn.

Garlic yogurt sauce
Let it sit five minutes so raw garlic calms down.

Arugula apple salad
Peppery leaves against crisp fruit, dressed at the last second. Arugula collapses faster than any other salad green.

Cook it, then tell the shelf what you used.
The ranking is only as honest as the shelf behind it. Empty the cream, and everything that leaned on cream should stop being offered.
