easyWhy tonight. Wedges, hard heat, acid after.
What it needs
Nothing confirmed on your shelf yet — this list is the whole ask.
- cabbage
- olive oil
- lemon
- parmesan
Good if you have them, fine if you do not: anchovies.
Method
- Cut it into wedges through the core so they hold together. Cored first, it falls into leaves and burns.
- Very hot dry pan, cut face down, and left alone for five or six minutes until it is genuinely black in places.
- That char is the dish. Cabbage cooked gently is a different and duller vegetable entirely.
- Lemon and parmesan after it comes off the heat, anchovy mashed into the butter if you want it to taste like a restaurant.

Why each of these is on the list
What the ingredients are actually doing
- cabbage
- Cheap, keeps for weeks, and completely different raw and cooked.
- olive oil
- Two ingredients sharing a name.
- lemon
- Acid you add at the end, not the start.
- parmesan
- Salt, fat and savory depth in a form that keeps for months.
Missing one of them? The substitutions are written against those jobs rather than against a chart, so they say what each replacement costs this dish in particular.
