- Roast the carrots hard and dry — oil, salt, 220C, no crowding. Steamed carrots will not take this sauce.
- Tahini thinned with lemon juice and cold water. It seizes to cement first, then loosens; keep adding water past the panic point.
- Garlic grated into the sauce, not the pan, so it stays sharp against the sweet carrot.
- Sauce spooned onto the plate and carrots laid on top, so the first thing they touch is not the plate.
