Method
- Cut on a long bias so there is more cut surface to caramelize, and roast at 220C.
- Cumin and chili in the oil before roasting, so they toast rather than scorching on bare carrot.
- Twenty-five minutes minimum, and do not crowd the tray. Crowded carrots steam and stay orange and dull.
- Lemon over them the moment they come out, while they are hot enough to absorb it. Yogurt underneath.
